Asparagus is a spring favourite, and fortunately, more and more people are familiar with it and prepare various delicacies from it. Its season lasts from late April to June, and it's worth trying in all forms, because in addition to being very delicious, it contains almost no calories, but plenty of vitamins.

White asparagus is white because it doesn't receive light, as it grows in earth mounds. The colour of the asparagus depends on the amount of light the plant receives and at which growth stage it is harvested. What grows underground will be white, but as soon as it grows out and is exposed to light, it turns green.

In Western Europe, especially Germany, there is a great cult surrounding the consumption of this plant, whereas its domestic popularity is unfairly low, despite Hungary being considered a major asparagus-producing country. Consequently, the majority of the domestic harvest finds buyers in Germany and Austria. It's true that it's not exactly a cheap vegetable, but due to its early appearance and beneficial physiological effects (it has a diuretic effect, contains a lot of vitamins A, B1, B2, C, E, and folic acid), it is definitely recommended to include it in your menu when it's in season." Usage

White asparagus can only be consumed cooked. Its taste is softer and milder than that of green asparagus, but its preparation is more complex because it always needs to be peeled. The most delicious part of the plant is its tip. Cut this off with a knife, no more than one centimetre below the tip, and set it aside. Hold both ends of the remaining stalk and gently bend it. It will break based on which part is fresher and which is tougher: the side closer to the tip is more tender, the other half is woodier. The latter part needs to be thoroughly peeled, but towards the end of the season, it may not even be usable due to its fibrous nature. The rest of the stalk only needs to be peeled thinly.

Asparagus can be consumed as part of soups, or roasted or steamed as a side dish.
