AI Summary
Country:
Hungary,Sipos Verjus
**Sipos Verjus** (pronounced: ver-zhoo) is one of the most exciting, forgotten, then rediscovered treasures of modern Hungarian gastronomy from the Badacsony wine region. The verjus from Sipos Winery is nothing other than the **gently pressed juice of unripe grapes from green harvesting**, which uniquely combines acidity with fruitiness.
About the producer
In their family, the viticulture and wine culture has been passed down from father to son. One of their great-grandfathers was the cellar master for Prince Esterházy in Badacsony until 1945, after which he continued farming on a small vineyard purchased from the state. At the time of the regime change – building upon the family's small vineyard and cellar – Tihamér Sipos envisioned the foundations of Sipos Winery. Our winery has continuously developed, our areas have grown, and we have built a modern cellar to get the most out of our grapes.
Currently, they cultivate 7 hectares of land. For them, winemaking is always a creative process, a sacred act, where beyond them and the wines, only God is present. They make wine that they themselves enjoy drinking, because for them, every wine has a story, be it a historical event, a moment of love, or even a joke.
