Grapoila Walnut Cream
Grapoila walnut cream was shortlisted by the esteemed jury in the innovation competition announced within the framework of SIAL, one of Europe's largest food industry exhibitions in Paris.
Among oilseeds, walnuts have been one of the most well-known and popular throughout Europe for centuries. By consuming them, the human body receives healthy fats, dietary fiber, vitamins, and minerals, which can help brain function and digestion, and prevent cardiovascular and inflammatory diseases.
The additive-free walnut oil, made from natural walnuts processed by gentle cold pressing, contains a concentrated amount of unsaturated fatty acids and special nutrients found in walnuts. During the pressing of Grapoila walnut oil – thanks to the Zero Waste food production technology – the saved oil sludge contains the valuable components of the oil, complemented by the fine, dry particles of the walnut kernels, thus forming a vitamin and mineral-rich, nourishing, yet very tasty, thick cream.
This product belongs to the category of upcycled foods, which are made from ingredients that would otherwise have gone to waste. Upcycling transforms by-products or surplus foods into high-quality and sustainable products, thereby reducing food waste and preserving our planet's resources. In this product, the nourishing ingredient has been given a second chance to show that every bite has value. By choosing upcycled products, we fight against food waste generated during production, manufacturing, and transportation. You too, by consuming them - vote with your fork.
Producer Information
Right from the very beginning, at the time of the company's foundation, environmental protection was important to them. Along with the idea of producing high-quality, whole foods from natural ingredients, their explicit intention was to create value from what others deemed waste. Grape pomace is a waste product of wineries, previously used at most for animal feed, yet they saw the precious, excellent physiological effects and quality oil-containing grape seeds in it more than 10 years ago. This first raw material marked the beginning of Grapoila's Zero Waste – i.e., waste-free – production of cold-pressed oils. During Zero Waste production, every part of the incoming raw materials is processed; nothing is discarded. In the case of grape pomace, the grape skin, rich in bioactive substances, is separated from the seeds and ground after drying. The packaged meal can be used to flavor cakes and creams. The seeds are also dried, and then oil is pressed from them – without heat treatment or additives – using their self-developed pressing machines. The cold-pressed oils thus obtained are healthy foods or cosmetic oils with extraordinary nutritional value, which are bottled in dark glass bottles. The sediment formed before filtering the freshly pressed oil is oil sludge, which, like the oil, is rich in essential fatty acids and vitamins, but also contains micro-particles of the seeds. This – depending on its nature – is sold as gourmet cream or cosmetic mud.
From the "dry residue" of oil pressing, the pellet – which is a low-fat and low-carbohydrate, but very rich in plant protein, vitamins, and other nutrients, gluten-free material – seed flours are ground, which are excellent baking additives. The pellet is also very popular among animal feed manufacturers, so it is sold to them for further use. Since only natural ingredients are used, the few by-products that cannot be utilized otherwise are dried for feed, potting soil additive, compost, or fuel. The latter, along with any green waste, goes into the biomass boiler that heats the drying system, thus closing the loop. Environmental aspects are also taken into account in the maintenance of the plant. For cleaning, primarily compressed air is used. For wiping, cleaning rags are rented from a company that extracts oil from the used rags, which they use to heat their laundry, and then receive clean ones again. Parts are cleaned with an organic washing system containing cleaning microorganisms that biologically break down fats and oils.
With "Zero Waste" production, they reduce their ecological footprint, are more environmentally conscious, and at the same time, reduce costs.
