Akashi whisky is produced at the White Oak Distillery, in the city of Akashi, west of Kobe, not far from the coast. The distillery was founded by Eigashima Shuzo (operating since the 17th century), a company that has been making sake and shochu since 1888. Although they received permission to produce whisky as early as 1919, they only truly began making whisky in 1984 – when they moved to their current location at the White Oak Distillery. The whisky distillers work only one month a year, so their spirits appear on the market in limited quantities.
