Haas Quittin Csalamádé preservative - mixture

Ingredients for making Csalamádé

• 1 sachet Haas Quittin Csalamádé Preservative
• 1 kg cucumber
• 1 kg cabbage
• 1 kg bell pepper
• 0.5 kg red onion
• 60 g salt
• 300-350 g sugar
• 3 dl 10% vinegar.

The ingredients, with the exception of cucumber, can be varied according to taste, e.g., green tomatoes, carrots, etc.

Preparation

1. Slice the cleaned vegetables thinly.
2. Place the chopped ingredients in a large bowl, evenly distribute the salt, sugar, and vinegar over them. Dissolve the Haas Quittin Csalamádé preservative mixture in approx. 0.5 dl warm water, then pour it over the vegetable mixture and mix thoroughly. Cover and let stand in a cool place for 1 night, during which the vegetables will release their juice.
3. Finally, fill the pre-prepared jars with the matured vegetables, pour in their juice, and seal them. This amount fills approximately 6 standard (720 ml) preserving jars.
