"An undegorged raw sparkling wine made from the Zenit variety using traditional methods. The base wine was made in 2020, then we personally made it into sparkling wine in 2021. Methode traditionelle, meaning the second fermentation took place in the bottle. The last step of sparkling wine production, disgorgement (lees removal), was omitted because we like the lees."

Harvested from 20-year-old vines. Biodynamically cultivated grapes, which, based on Rudolf Steiner's philosophy, is a holistic homeopathic farming method where preparations and teas are sprayed onto the plants. The sparkling wine is an undegorged sparkling wine from the 2020 harvest, made into sparkling wine in 2021. It has been aging on fine lees ever since.

Producer information

The history of the Turay family, who operate the Turay Family Winery, dates back to the 17th century. The family's noble rank was granted by Emperor Leopold I in 1663. Thanks to historical research, it was revealed that the Turays have been cultivating grapes for 12 generations, but during the turbulent historical period of the 20th century, their vineyards and estates were lost. Their current cellar and winery came back into the family's ownership in February 2002.

In the autumn of 2006, they began replanting the vineyards. The vineyard planting is ongoing; in the autumn of 2018, an additional 0.4 ha of land was acquired alongside the existing 2 ha, for which they chose resistant grape varieties, including Solaris, Kékfrankos, Borsmenta, and Olaszrizling. They select their varieties according to the regional characteristics, so their existing vines – Rozália, Olaszrizling, Generosa, Pinot Noir, Cabernet Sauvignon – are excellently suited to the clay, marl, and limestone soil.

Storage
Store in a cool place, away from light. After opening, store in the refrigerator. Consume within 3 days after opening.
