Ingredients

  • 1.5 kg goose fat (skin-on)
  • 1 tbsp milk
  • 2 medium red onions (for serving)

Preparation

  1. Clean the goose fat from any remaining membranes and small feathers.
  2. Dice into 2-3 cm pieces.
  3. Render in a 2.5-3 liter pot over medium heat for approx. 30 minutes.
  4. Pour in 1 tablespoon of milk and cook for another 5 minutes covered.
  5. Strain the fat.
  6. In a pan, without additional fat, fry the cracklings until dark red for approx. 5 minutes.
  7. Remove onto a paper towel to absorb excess fat.

Storage

Store frozen at -18°C or below.
