Fresh green pepper is a special, intense-flavoured spice, which is slightly hot, yet fresh and fruity in aroma. It is harvested unripe, then marketed fresh or pickled. It is excellent for Asian dishes, sauces, meats and salads. Its crispy texture and rich flavour give a special character to dishes.
