Filling Preparation
Choose your favorite fillings, such as minced meat, shrimp, glass noodles, shredded carrots, mushrooms, and onions. Mix the filling with seasonings like garlic, fish sauce, salt, and pepper for extra flavor. If using meat or seafood, lightly steam them beforehand to ensure even cooking when fried.
Rice Paper Preparation
Fill a large, shallow bowl or plate with warm water. Dip a rice paper into the warm water briefly, just until it becomes soft and pliable. Lay the softened rice paper on a clean surface, such as a cutting board or damp cloth.
Filling and Rolling:
Place a small amount of filling in the center of the rice paper. Fold the sides of the rice paper over the filling. Roll up the rice paper tightly, starting from the bottom, until you have a nice, firm spring roll. Make sure the filling is tightly packed to prevent it from bursting during frying.
Deep Frying
Heat a generous amount of oil in a deep fryer or large saucepan to 175-180°C. Carefully place the spring rolls into the hot oil, making sure they do not overlap. Fry the spring rolls in small batches until they turn golden brown and crispy, which usually takes around 3-5 minutes per batch. Remove the spring rolls from the oil and place them on paper towels to drain any excess oil.
Serving
Serve the crispy spring rolls hot and enjoy with a variety of dipping sauces, such as fish sauce (nước chấm), sweet and sour sauce, or peanut sauce.
