Spiked cucumber, or Kiwano

 Kiwano is a vegetable about 10 cm in size, oval-shaped, with pointed conical horn-like protrusions. Ripe fruits are bright orange in colour. Inside, there is a green, jelly-like, soft and juicy pulp with many fragile, crunchy seeds, similar to the inner pulp of a ripe cucumber, which it resembles in taste, but with a sweet, slightly twisted, banana, kiwi, and lime-like aroma.
The fruits are not suitable for long-term storage. The skin of a ripe kiwano, including the ridges, should be pale orange, firm, and free from spots and bruises. In some areas, the fruits are also consumed unripe, when they are more acidic and have a more vegetable-like taste.

Consumption

Its taste is suitable for both savoury and sweet dishes. Only the juicy, seedy pulp or its juice is consumed. Cut the fruit in half and scoop out the pulp with a spoon. To extract the juice, place the pulp with the seeds in a fine sieve and press out the juice with a spoon or other suitable tool. After scooping out the pulp, the decorative rind can be filled with ice cream, puddings, creams, fruit salads, and other desserts.
