Morbidi Blue mold ripened fatty semi-hard sheep cheese
This is a Pecorino cheese produced with pasteurized milk, during processing penicillium Roqueforti is added to the milk. After about 15/20 days holes are made to facilitate the growth of internal mold due to ventilation. Complete ripening occurs after about 60/90 days, then it is packaged to maintain the proper ripening of the mold. Once opened, the pecorino has a compact white paste, with the characteristic blue veins of the Roqueforti mold. It is characterized by a delicate and not aggressive taste.
Serving suggestions
- As an aperitif: on a cutting board it is recommended to taste it with sweet wines such as Passito or Vin Santo, accompanied by dried fruit, honey, jams and cold cuts.
- In a salad: rocket salad, pear, blue cheese, walnuts and honey.
- In a sandwich: excellent for filling quality sandwiches
