Morbidi Noble Mold Ripened Fatty Soft Sheep Cheese
This is a Pecorino cheese, produced with pasteurized milk. During processing, Candidum pennicillum is added directly to the boiler. The curd is broken into large pieces (like walnuts) to preserve moisture and creaminess. After about 15 days, when the first mold appears on the surface, it is wrapped in paper. Full ripening occurs after about 30/40 days. With ripening, the product becomes creamy and flavorful, so we wrap it in paper to maintain the proper ripening of the shape. Soft pecorino cheese with a creamy and soft texture, white mold on the rind, sweet and delicate flavor.
About the brand
