Morbidi Ricotta stagionata con tartufo - Aged semi-fat ricotta with truffle made from sheep's milk
Ricotta (literally "recooked") is made by coagulating the proteins that remain after the casein has been made into cheese, it comes from the whey proteins, which is the part of the liquid that separates from the curds during cheese making. during this we add the various spices. The coagulation process of the whey proteins takes place by heating the whey to 80-90 °C. The oldest method is to heat the serum waiting for the ricotta to come up. We work following this method, collecting it by hand and putting it in the molds in layers. At this point we dry them in the oven for one night and the product is ready.
