Patak's Balti Sauce

Tomato-based sauce with paprika, cumin and coriander. Suitable for vegans!

Suggested use

Ingredients: 4 servings

• 4 chicken breasts or 1 butternut squash.

Preparation: 20 minutes

1. Fry the diced meat or butternut squash in a little oil (approx. 5 minutes).
2. Add the sauce and continue cooking (approx. 15 minutes) until the meat/squash is cooked.

TIP: Add a handful of diced courgette to the sauce.

Producer information

The brand was founded by Indian-born L.G. Pathak. When his father died, the family moved to Kenya in the hope of a better life, which they found: they opened a shop where they sold Indian sweets to other families who missed the flavours of home.

In 1956, the family moved to Great Britain. L.G. struggled to find work, so his wife, Shanta, came up with the idea of restarting their Kenyan business in London. The delicacies she made in her tiny kitchen soon became popular, and there were soon queues outside their front door.

A few years later, they opened an Indian grocery store, but the real turning point came when the Pataks (they had dropped the "h" from their name by this time) accidentally ordered too many vegetables. L.G. decided to make pickles from the surplus vegetables. Preserved in oil with freshly ground spices, the vegetables were able to retain the authentic flavours of India.

Their son, Kiri, took over the management of the brand. His wife, Meena, came up with the idea of making sauces that would allow people who didn't have time to mix their own ingredients to make a quick and easy curry at home. And as they say, the rest is history.

Storage

Store in a cool, dry place. Use immediately after opening.
