CHATEAU LESTAGE SIMON HAUT MEDOC
In the glass, the wine of Chateau Lestage Simon Bordeaux Haut Medoc shows a dense purple color. After the first swirl, this red wine displays great density and richness, manifesting as strong 'church windows' on the rim of the glass. The aroma of this Bordeaux red wine captivates with nuances of mulberry, blackberry, blueberry, and blackcurrant. If we follow the aromatics further, oak and Mediterranean herbs appear. Its taste begins wonderfully dry, distinctive, and aromatic. On the palate, this powerful red wine has an exceptionally fleshy texture, finally captivating with a significant echo.
The powerful Bordeaux Haut Medoc from France is a cuvée made from Cabernet Sauvignon and Merlot grape varieties. The grapes for Bordeaux Haut Medoc are harvested in perfectly ripe condition, particularly quickly and during the coolest part of the day, to preserve their aromas. After manual harvesting, the grapes quickly arrive at the winery. Here they are sorted and carefully destemmed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. Winemaking is followed by several months of aging on fine lees before the wine is finally drawn off.
A perfect accompaniment to chicken braised in red wine, roasted calf's liver with apples, onions and balsamic sauce, or duck breast with sugar snap peas.

Producer Information
Bordeaux, the city of merchants, saw the arrival of its first bourgeoisie in the 12th century. Members of this new class quickly reaffirmed with their English rulers the rights and privileges they had enjoyed since the feudal era. On this basis, when Guyenne returned to French rule at the end of the Hundred Years' War, they were able to acquire from the crown privileges usually reserved for the nobility: the right to bear arms, and thus the title of landed estates. Enriched by centuries of international trade, this merchant class acquired large estates and established vineyards that eventually became known colloquially as "Crus Bourgeois". A perfect embodiment of the Cru Bourgeois, Château Lestage Simon, located in Saint-Seurin-de-Cadourne, next to the great vineyard of Saint-Estèphe, benefits from an excellent, complex, and varied terroir, the quintessence of which forms the basis of the chateau's wines. The location of the vines is very diverse: some grape varieties come from sandy soils along the river, while others originate from limestone and clay-limestone soils further inland.
