Beef brisket is not difficult to prepare, but it does require patience. It can be used for boiling (in soup or sliced and served with sauce), smoking, stews (e.g. goulash, stew, ragout), if it is veal, it can also be stuffed or roasted. The meat is matured for 10-14 days using the so-called dry ageing method, under strict hygiene and cooling measures, which fully comply with all standards and conditions for the production of certified and wholesome organic food and products. They are subject to strict and regular veterinary supervision, which guarantees the highest hygiene and health safety. Origin of the meat

Organic quality meat comes exclusively from ecological farms where animals are fed with natural, plant-based food and never come into contact with pesticides or artificial fertilisers during their lives. The taste, smell, appearance and durability of the meat are not influenced by chemicals or artificial additives, which can be harmful to the human body. Consumers of such meat products are guaranteed quality food that not only protects their health but also far surpasses traditional meat in terms of taste and appearance.

Preparation time: resting + 360 minutes

Ingredients

  • 200 g salt
  • 90 g brown sugar
  • 60 g pickling spice
  • 1.8 kg beef brisket
  • 60 g black pepper
  • 60 g mustard seeds
  • 30 g garlic powder
  • 2.2 l water
  • 220 ml white wine vinegar
  • 3 handfuls of smoking chips

Preparation

  1. One day before roasting, make 1.8 l of brine from 110 g salt, brown sugar and pickling spice.
  2. Put the whole brisket in a sealable bag, pour the water over it and seal it. Put it in the fridge until the next day.
  3. The next day, prepare the grill for roasting and heat it to 110°C. Place the smoking chips in the grill at this point.
  4. Drain the brine from the meat and pat the excess moisture off the meat, then prepare a spice mix.
  5. To do this, mix the remaining salt with the pepper, coriander, mustard seeds and garlic. Rub the meat well with this and place it on the grill.
  6. Make a liquid from the white wine vinegar, the remaining water and a couple of spoonfuls of spice mix, which you can use to baste the meat every 45 minutes. This will add extra flavour to the meat and stop it from drying out.
  7. Roast the meat for at least 3.5 hours, then wrap it in aluminium foil, reduce the temperature even further and roast for a further 2 hours.
  8. When you take the meat off the grill, leave it to rest for 20 minutes and only then cut it into wafer-thin slices. Serve with pickles and mustard.
