Squid Fish Sauce
What salt and pepper are to Europe, fish sauce and sugar are to Thai cuisine. Thai cuisine uses salt as rarely as possible, most often seasoning with fish sauce. It is made from small fish that are fermented in barrels with a little water. After a certain amount of time, the fish sauce is tapped from the barrel. As with olive oil, the first tapping is considered to be the best quality.
