Legend has it that nachos were invented in a Mexican-American border town restaurant when hungry customers arrived after the kitchen had closed. The resourceful headwaiter sliced corn tortillas into triangles, fried them until crispy, and served them with grated cheddar cheese and sliced jalapeños.

The original nachos are served as an appetizer in Mexican restaurants (topped with a sauce of some kind - salsa, guacamole, etc.), but today they are most popular as a snack, served with a dip, or crushed and used as a breading for vegetables or meat in modern cuisine.
