Product description

Philadelphia is more than just a delicious cream cheese. It can be used to make soups, salads, main courses, desserts and drinks. Made with pasteurised milk, with no added preservatives. Suitable for vegetarians.

Recipe

Chicken stuffed with spinach

4 chicken breasts, each approx. 150 g
1 tbsp olive oil
1 tsp paprika
1 tsp sea salt
120 g Philadelphia with herbs
100 g fresh baby spinach leaves, finely chopped
salad leaves, to serve
100 g sugar snap peas
100 g green beans
100 g tender stem broccoli

Method

1. Preheat the oven to 200°C/fan 190°C/gas 6.
2. Put the spinach in a large colander and pour over a kettle of boiling water to wilt it. Refresh under cold water, then squeeze out any excess water so it’s dry.
3. Put the chicken breasts on a clean chopping board and drizzle over the olive oil. Add the paprika and sea salt to a small bowl and mix together. Season both sides of the chicken evenly.
4. Using a sharp knife, make a deep pocket in the side of each chicken breast.
5. In a bowl, mix together the herby Philadelphia, the drained cooked spinach and some ground black pepper, then mix well. Spoon the spinach mixture evenly into each chicken pocket and wrap to enclose.
6. Put the chicken breasts in a roasting tin and cook in the oven for 20-25 minutes, or until the chicken is cooked through. While the chicken is cooking, cook the sugar snap peas, tender stem broccoli and beans in boiling salted water. Serve the chicken and green vegetables immediately with a fresh green salad.
