Szafi Reform Baking Powder (gluten-free)

Why is the corn- and phosphate-free (Szafi Reform) baking powder good?
- Guaranteed gluten-free, it also does not contain corn starch, wheat, or soy, so those sensitive/allergic to these can also consume it - Unfortunately, most gluten-free baking powders are not corn-free.
- Soft, airy, light-textured doughs can be made with it, yeast- and phosphate-free.
- Contains natural tartaric acid, as opposed to synthetically produced phosphate compounds.
Usage
For increasing volume when making breads, baked goods, and pastries. 4 g of Szafi Reform baking powder corresponds to 1g of baking soda. It does not require any liquid or powdered acid during preparation, and typically, adding yeast is not necessary either.
Currant muffin recipe
Ingredients (for 6 pieces)
- 150 g Szafi Free Universal flour blend
- 30 g Szafi Reform Erythritol
- 20 g Szafi Reform Vanilla erythritol
- 2 g salt
- 6 g Szafi Reform Baking Powder
- 3 g grated lemon zest
- 15 g melted coconut oil
- 220 g lukewarm water
- 50 g frozen currants (without thawing)
Preparation
Mix the dry ingredients, then pour in the water and oil, and whisk until lump-free with a hand whisk. Then divide the mixture into a 6-piece silicone muffin baking mold, sprinkle the frozen currants on top, and place in the oven.
Baking
In a 180 °C preheated oven, on top and bottom heat setting, for 32 - 35 minutes.
Storage
Store in a dry, cool place.
